The tree belongs to the laurel family, and if let alone will attain a height of some twenty or thirty feet; but as a cultivated shrub it is cropped close. In June, when the flow of sap is most abundant, the shoots are cut short off. From each stump spring up almost immediately numerous fresh shoots, red at first, but soon turning to a vivid green. When these shoots get to be about as large as one's finger, they are fit for "barking." They are then cut off and carried to the huts of the "peelers," who form a caste by themselves, known as Chaliahs, who appear to be descendants of immigrants from India. They have that flexibility of the toes which renders the feet almost equivalent to a second pair of hands. A peeler takes up a cinnamon-twig, and holds one end between his toes, the other being grasped by the left hand. In his right hand he has a crooked knife with which he scrapes off the rough outer bark, and then slits the inner bark along the whole length of the twig. This bark is readily peeled off, and in it exclusively is contained the delicate essential oil which gives the cinnamon its characteristic flavor and odor.-Frank Leslie's Sunday Magazine, Volume 6
